This morning I was struggling to find something fun and different for my Sunday brunch. Greg and I take turns each Sunday making it and while he always has fun things for us, I usually don't stray far from pancakes or french toast. I wanted something with apples so I googled apple breakfast ideas and baked apple pancakes came up. Took me awhile to find one that I liked but I did and it tastes delicious!!! It was sweet, tart and oh so perfect.

Ready to serve. I can't even explain how fabulous it was. Definitely a make again.
Here is the recipe if you wish to make it one morning:
Baked Apple Pancake
Ingredients:
1/3 cup Maple Syrup (I used sugar-free organic)
1/4 cup Brown Sugar
1/4 cup Butter
2 Apples - peeled, cored + thinly sliced
1 Egg
1 cup Milk
1 tbsp melted butter
1 1/4 cups flour (I used whole wheat flour)
2 tbsp sugar
2 tsp baking powder
Directions:
1. Preheat oven to 400 degrees
2. In a round 9inch baking pan, put in the maple syrup, butter and brown sugar. Stick in oven and cook for 5 minutes
3. Remove and stir to ensure all sugar is dissolved.
4. Arrange apple slices in circle around pan on top of syrup mixture. Make sure to overlap the apple slices. Set aside.
5. Whisk together the egg, milk and melted butter. In a medium bowl, combine the flour, sugar + baking powder. Pour in the milk mixture and mix until smooth.
6. Pour batter over the apples.
7. Bake for 20 - 25 minutes. Remove from oven and turn out onto a serving plate.
8. Sprinkle with cinnamon + icing sugar.
9. Serve warm.
