Tasty Tuesday: Finley's Favorite Oatmeal

I purchased Jessica Seinfeld's first cookbook while I was pregnant and was instantly in love with it.  Finley loves the oatmeal so I thought I would share it with you:

Oatmeal
Prep: 10 minutes
Total: 13 minutes
Serves: 2

1 cup nonfat milk
1/4 cup firmly packed brown sugar
1/4 cup canned pumpkin or sweet potato puree
1 tsp vanilla extract (optional)
1/4 tsp cinnamon or pumpkin pie spice
1 cup old fashioned oats
2 tsp natural peanut butter (optional)
dried fruits + nuts (optional)
pure maple syrup for serving

1.  In a small saucepan, combine the milk, sugar, puree, vanilla, spice.  Bring to a gentle boil and stir in oatmeal.  Reduce the heat and simmer for 2 - 3 minutes, until the oatmeal is soft and creamy.  Stir in peanut butter if using.
2.  Spoon into bowls, sprinkle with dried fruit and nuts, if you like and serve warm with maple syrup.


I do add the vanilla and peanut butter but i skip the dried fruit, nuts + syrup.  Finley hates raisins, isn't fond of peanuts and doesn't need the maple syrup.  I usually double the  recipe and freeze it in individual portions for Finley and I.  I can usually get about 7 - 10 servings by doubling it probably by not making the portions as big as she does.  I also warm it in the microwave with milk and then serve.

Finley absolutely loves it and she eats up super fast along with her glass of milk and apple slices.  I highly recommend you give this recipe a try!
